L'Osier — French for "the willow," after the trees that once symbolized Ginza — opened in 1973 inside Shiseido's world and has been a fixture of the neighborhood ever since, now occupying a serene room beneath a nine-meter glass atrium with a willow artwork at the door. Chef Olivier Chaignon, who trained at Taillevent and Pierre Gagnaire before taking over in 2013, cooks classical French with a lighter, contemporary hand and a real sustainability streak, building close ties with producers across Japan and France. Expect blue lobster, precise pigeon, wagyu, and exacting service in a luxurious, art-filled space. Three Michelin stars held continuously since the 2019 guide, plus a Green Star.
