At L'Effervescence he applies French method to meticulously sourced Japanese ingredients, often listing his farmers and fishers on the menu. The signature isn't a luxury showpiece but a single Tokyo turnip, slow-cooked for hours and dressed with brioche crumbs — an homage to the people who grow his food. The meal ends with a Sowa-style matcha, the room is a hushed escape from the city, and the whole operation aims to be "regenerative," publishing an annual waste-and-emissions report.
