Hiroyuki Kanda grew up in a family restaurant in Tokushima, trained in Paris and Japan, and has held three Michelin stars without interruption since the Tokyo guide launched in 2008 — a run that puts him among the most consistent chefs anywhere. His motto, "subtle flavour is true flavour," tells you what to expect: carefully chosen seasonal ingredients, minimal intervention, rice cooked so precisely the surface dimples like crab burrows. There's no written menu, the room (designed by artist Hiroshi Sugimoto) seats only a handful at the counter, and Kanda himself works it personally. He's also a Michelin Mentor Award winner for the chefs he's brought up. Intimate, exacting, and worth the effort of the booking.
