Inside LVMH's Cheval Blanc hotel overlooking the Seine, the Paris home of a chef who treats sauce like a perfumer treats scent — three Michelin stars won in record time.
Chef Arnaud Donckele already held three stars at La Vague d'Or in Saint-Tropez when he opened Plénitude in 2021 on the first floor of Cheval Blanc Paris, the LVMH hotel set in the restored Samaritaine, its windows facing the Seine and the Pont Neuf. It won three Michelin stars within roughly seven months — an almost unheard-of feat. Donckele works as a self-described saucier-parfumeur, composing his sauces like a master perfumer building a fragrance in top, heart and base notes; you're asked to taste each one first, before the dish it belongs to, to follow its aromatic arc. The room is an intimate cocoon of cream and yellow with just 26 seats, and pastry prodigy Maxime Frédéric handles the desserts. There's a wine cellar carved from a single block of wood and a 19/20 from Gault & Millau. A long, poetic, sauce-led evening at the symbolic heart of Paris.
