Le Cinq is haute cuisine in full palace dress: lofty columns, ornate mouldings, towering floral sculptures, light pouring in from an interior garden. Chef Christian Le Squer — who'd already held three stars for over a decade at Pavillon Ledoyen — took over in 2014 and regained the third star here in 2016, and he's one of only a handful of chefs in Paris leading a three-star kitchen. A Breton at heart, he keeps returning to his childhood coast: sea bass with caviar and fermented milk, a gratinated Parisian onion that bursts with soup at the touch of a spoon. The cellar runs to 50,000 bottles, the pastry forgoes sugar for fruit and honey, and the George V holds a Europe-leading six Michelin stars across its restaurants. A quintessential grand Parisian night.
