Norway’s first three–Michelin-star restaurant outside Oslo, where Chef Sven Erik Renaa cooks the cold, clean Rogaland coast for just twenty-two lucky guests a night.

Tucked into the Eilert Smith Hotel on Stavanger’s waterfront, Re-naa is reason enough to point yourself toward the far edge of Norway. Chef Sven Erik Renaa and his wife Torill built the place around closeness — every single table is a chef’s table — and around whatever the fjords, farms and North Sea hand over that week. The cooking is precise and unhurried, with a light Japanese accent, content to let one perfect piece of tuna or hand-dived squid do the talking. Chef Renaa was the first chef outside Oslo to win one star, then two, now three: a very big deal achieved very quietly.
