Among the Barolo vineyards of the Langhe, a chef obsessed with gardens and memory earned three Michelin stars in barely two years.

Chef Michelangelo Mammoliti trained for years in France under Ducasse, Gagnaire and Alléno before coming home to Piedmont, and at La Rei Natura — inside the Il Boscareto resort, surrounded by Barolo vines — he cooks something deeply his own. His food draws on neurogastronomy and childhood memory, much of it built from a 200-square-meter greenhouse and garden where he grows 130 varieties of tomato and countless herbs, roots and flowers himself. There are three tasting menus, including a blind one called Mad100%Natura that's the purest expression of his obsession with the plant world. It opened in 2023 and reached three Michelin stars by late 2025 — one of the fastest ascents Italy has ever seen. A two-hour drive from Milan through some of the loveliest wine country in Europe, and worth every switchback.
