Chef Arnaud Lallement grew up in this house: his parents opened L'Assiette Champenoise in 1975, he took over the kitchen, lost his father in 2002, and then climbed steadily to a third Michelin star in 2014 — a star he openly dedicated to his dad. His philosophy is "manger vrai," eating true: clean flavors, impeccable produce, masterful sauces poised right on the edge of acidity. The dish that says it best is the Brittany blue lobster he calls "a tribute to my father," after the festive lobster his dad cooked on special occasions. It all sits in a Relais & Châteaux mansion in the heart of Champagne, with one of the deepest Champagne lists anywhere to match. Family-run, deeply felt, and worth the detour off the vineyard road.
