On the windswept tip of Noirmoutier island, a fisherman's son turned a tiny harbor restaurant into one of France's most spellbinding three-star tables.
Chef Alexandre Couillon and his wife Céline took over his parents' restaurant on the L'Herbaudière harbor in 1999, and over two decades built it into something extraordinary — in 2023 it became the only new restaurant in France to earn three Michelin stars that year, and the first ever in the Vendée. Couillon cooks the island almost literally: the day's catch from the Noirmoutier fish market, coastal plants gathered along the shore, vegetables from his own plots, with braising and live fire doing much of the work. Dishes like charcoal-grilled mackerel with beetroot or flame-grilled lettuce with elderflower vinegar sound humble and land like revelations. There's a Green Star for the restaurant's deep ecological commitment, and a serene new dining room opened in 2025. Remote, salt-sprayed, and worth every mile of the trip out to the island.
