A plant-based three-Michelin-star landmark on Madison Square Park — once named the best restaurant in the world.
Chef Daniel Humm has held three Michelin stars at Eleven Madison Park since 2012, and in 2017 it was named No. 1 on the World's 50 Best. Then he did something genuinely radical: after the pandemic, during which the restaurant became a relief kitchen serving over a million meals, he reopened in 2021 with an entirely plant-based menu — and in 2022 it became the first plant-based restaurant in Michelin history to earn three stars. It's a temple of precision where nearly everything is custom-made, the plating is art, and vegetables do things you wouldn't believe (a tonburi "caviar" quenelle, a warm vegan roll with faux butter). As of 2025 there are a few optional animal-protein courses again. A real statement about what luxury can be.
