Restaurant Mirazur

Tucked onto the coast right where France meets Italy, Mirazur has the kind of Mediterranean view that would carry a lesser restaurant on its own — but Chef Mauro Colagreco isn't a coast-on-the-view sort. He runs the whole place by the lunar calendar now, harvesting from his own terraced gardens and building daily menus around nature itself: roots, leaves, flowers, fruit. The cooking is flawless but never fussy — big, harmonious flavors you don't need a decoder ring for. It topped the World's 50 Best, became the first restaurant anywhere to go fully plastic-free, and even bought a local bakery to make its own bread. Three Michelin stars.
