Flocons de Sel sits up a winding road above Megève, a chalet on the edge of the forest with the peaks for a backdrop — and Chef Emmanuel Renaut cooks the landscape around it almost literally. A Meilleur Ouvrier de France who fell for these mountains as a boy, he builds his three-Michelin-star menus from lake fish, foraged herbs and mushrooms, mountain cheeses and alpine plants, with a pure, pared-back touch and the occasional wink — langoustines with gentian, say. His pike-and-monkfish dumpling has become a signature. The cellar hides a small obsession, too: one of the great collections of Chartreuse, some bottles dating from before 1900. Stay the night if you can — it's a Relais & Châteaux refuge as much as a restaurant.
