As a kid, Chef Dabiz Muñoz told his father he'd run a restaurant with queues around the block; his father said sure, when pigs fly. Flying pigs now cover the walls of DiverXO, Madrid's only three-Michelin-star restaurant, and the last laugh is thoroughly his. After cooking at Hakkasan and Nobu in London, he opened here in 2007 and climbed to three stars by 2013, restoring a top Michelin honor to Madrid after two decades without one. His single tasting menu — "The Kitchen of the Flying Pigs" — is irreverent, maximalist Spanish cooking shot through with Asian influences, served as edible "canvases," and it's spent years near the very top of the World's 50 Best.
