Jade Dragon is a temple to Cantonese fine dining inside Macau's City of Dreams — a lavish room of ebony, jade, crystal and beaded curtains, with calligraphers and tea masters on hand and a private lift to reach it. Chef Kelvin Au Yeung's cooking honors tradition while reaching for the best of everything: meats barbecued over fragrant lychee wood (the suckling pig has a serious following), double-boiled tonic soups drawn from Guangdong's nourishing-broth tradition, and dim sum at lunch worth planning around. It holds three Michelin stars and, uniquely among Chinese restaurants in Greater China, three Black Pearl diamonds as well. Cantonese grandeur with nothing held back.
