Chef Fabien Ferré spent years as second-in-command to Christophe Bacquié here; when Bacquié left in 2023 and the stars were reset, Ferré stepped up, made the kitchen his own, and in March 2024 pulled off something almost unheard of — three Michelin stars in a single stroke, at 35, the youngest French chef to land directly at the summit. His cooking is a love letter to Provence: Mediterranean seafood and vegetables, minimalist and precise, lifted by full-bodied sauces, with signatures like squid perfumed with marjoram. The contemporary dining room looks out over lavender beds, ponds and the Var hills toward the sea, and the cheese cellar alone — some fifty artisanal varieties you choose yourself — is worth the trip.
