FZN made history fast: the first restaurant in the United Arab Emirates to earn three Michelin stars, and it did it within months of opening in late 2024. It's the Dubai outpost of Chef Björn Frantzén — whose Stockholm flagship and Singapore sibling are also three-star, making him the only chef anywhere to hold three of them at once — set inside Atlantis The Palm and run day to day by his handpicked executive chef, Torsten Vildgaard. The format is pure Frantzén theatre: a doorbell, a Scandi living room for canapés, a house tour, then a counter around the open kitchen for a nine-course run of Nordic cooking gilded with Japanese precision and luxury seafood. Don't fill up before the miso madeleines at the end. A grand finale in a city that likes them.
