Not many restaurants come with a dynasty attached, but Crissier, just outside Lausanne, does. The legend started with the great Frédy Girardet and carried through Philippe Rochat and Benoît Violier; today Chef Franck Giovannini works the pass, having cooked beside every one of them. He keeps Girardet’s golden rule — rarely more than three flavors on a plate — and sends out classical French so clean and so à la minute it feels almost defiant. The dining rooms are named after the chefs who built the place, in case you forget you’re eating inside history. Three Michelin stars, not dropped once since 1994.
