Le 1947 takes its name from the most coveted vintage of Château Cheval Blanc, and the room lives up to it: an intimate, all-white space with just five tables wrapped around an open kitchen, snow-draped peaks filling the windows. Chef Yannick Alléno earned its third Michelin star in 2017 and has held it since, building a contemporary cuisine around superb Savoie ingredients and, above all, his sauces — the fruit of a years-long obsession with extraction and fermentation that genuinely reshaped how French kitchens think about them. It runs only through the winter season, serving a small number of diners each night. A three-star pilgrimage you reach by mountain road, worth planning a whole trip around.
