Take the lift up Parken Stadium — yes, the football stadium — to the eighth floor, and you'll find Chef Rasmus Kofoed's Geranium, the first Danish restaurant ever to hold three Michelin stars, with huge windows over the park and a peek at the pitch below. Kofoed cooks with a precision that's honestly a little absurd, and the plates are some of the prettiest you'll see anywhere; he dropped meat entirely in 2022, so the long "Universe" menu runs on Scandinavian seafood and biodynamic vegetables and somehow never feels like it's missing a thing. His partner Søren Ledet runs a famously warm room and a drinks list to match, down to a juice pairing that's no afterthought. Topped the World's 50 Best and landed in its hall of fame. Worth every floor of the climb.
