Chef Dimitri Droisneau came up through some of Paris's most serious kitchens — La Tour d'Argent, Le Bristol, L'Ambroisie under Bernard Pacaud — before he and his wife Marielle took over La Villa Madie in 2013, in the secluded Anse de Corton just east of Cassis. The setting is staggering: a minimalist room and terrace hanging over the Mediterranean below the highest sea cliff in France. Droisneau's cooking is pointedly restrained — rarely more than five elements on a plate — built on his own 3,000-square-meter garden and seafood from nearby Marseille, with a signature carabineros prawn paired with red berries that the Michelin inspectors called celestial. The third star came in 2022. Time a long lunch for the warm months and dine on the water's edge.
