Atrio Cáceres

Atrio is the decades-long life project of Chef Toño Pérez and his partner, sommelier José Polo — childhood friends who built it inside the UNESCO-listed old town of Cáceres, in Spain's quiet Extremadura. The cooking is Pérez's love letter to the region: Iberian and Extremaduran ingredients run through modern technique, often built into a long tasting menu around a single product. But the cellar is the stuff of legend — one of the great private wine collections anywhere, vast enough that the list comes as a book, and notorious enough that thieves once pulled off a headline-making heist of its rarest bottles. Three Michelin stars, in a contemporary space folded into medieval stone. Worth the trip out to Extremadura.
