A 16th-century manor in the Lancashire countryside with its own five-acre gardens — and three Michelin stars built on what grows a few steps from the kitchen.
Chef Mark Birchall cooked at L'Enclume before taking the kitchen at Moor Hall, a Grade II–listed Tudor manor near Aughton, half an hour north of Liverpool, that its owners restored and reopened in 2015 with a modern, Scandi-style dining room grafted onto the old house. Lancashire-born and deeply tied to the area, he builds his menus around the restaurant's own five acres of gardens and a tight circle of local farmers and artisans, with house charcuterie, a micro-dairy and bread baked on site. Dinner begins with snacks, the last served in the kitchen where Birchall walks you through the day's produce. His way with humble roots is the stuff of legend — a turnip with crab, sunflower seeds and anise hyssop that the Michelin inspectors single out. The third star came in 2025, alongside a Green Star; there are rooms if you'd rather stay. A genuine special journey, star or no.
